Tim Siadatan was one of the very first chefs to be selected to join Jamie Oliver’s Fifteen scheme in 2002. Following his graduation from Fifteen, he worked at Luke Mangan’s Salt in Sydney, before returning to London to work under the helm of Fergus Henderson at St. JOHN for two years. Following three years under Sam and Sam Clark at Moro, Tim went on to open Trullo with his business partner Jordan Frieda in 2010 to critical acclaim. In 2016, Tim and Jordan opened Padella, the pioneering pasta eatery in Borough Market, serving simple and affordable pasta dishes. In 2020, Padella Shoreditch was opened. Tim continues to oversee all sites, now with a cookbook to his name, which is synonymous with bold Italian cooking.
