Tom Jackson is a self-taught cook and creative director from Birmingham, now based in London. Tom’s unconventional route into food began with a stint at the since-shuttered cafe-come-restaurant Railroad, where he made thousands of (excellent) bacon sandwiches, Bánh Mì and, if you caught him on a good day, the best fried eggs in Hackney. After a summer flogging fruit and vegetables at Able and Cole, Tom then went on to co-found the award-winning food media publisher Twisted, which now boasts a global following of over 40 million. He has authored two cookbooks on behalf of the brand and is now working on his debut solo cookbook, set to be published in spring 2024. Tom lives in Bethnal Green with his wife Lyds and their houseplant, Big Sils.
