Jack Croft and Will Murray are the founder chefs of Fallow, one of the most exciting restaurant concepts in the UK. Having met while working at the two-Michelin-starred Dinner by Heston Blumenthal, they developed a shared approach to cooking rooted in technical precision, creativity, sustainable food practices and a deep respect for ingredients.
In 2019, Jack and Will founded Fallow (along with hospitality entrepreneur James Robson), launching a series of sold-out residencies before opening their permanent home in St James’s. Their distinctive approach to modern British cooking champions overlooked ingredients, whole-animal cookery and imaginative ways of reducing waste — turning everything from cods' heads to mushroom offcuts into some of Fallow’s most recognisable dishes.
Since then, Jack and Will have expanded their restaurant portfolio with FOWL and Roe, while building an international audience online through their candid, educational and highly engaging food content. Their work brings together the discipline of fine dining with an accessible, energetic approach to food, making them two of the most recognisable voices in a new generation of British hospitality.
